Historique: 

First mentioned in 1250, the Saering plot escapes from the hill and extends like a peninsula on the plain, forming a sort of tongue of land in the form of a ring. It has been sold under its own since 1830.

Situation: 

To the north of Guebwiller, Saering faces east and south-east at an altitude of 260 to 300. Saering marl/limestone/sandstone terroir brings out the best in this magnificent, fine, delicate Riesling.

Vinification: 

The grape are hand-picked and whole bunches are pressed. There is static settling of the lees. The wine is fermented in temperature controlled tuns, followed by raising on the less for 8 months. Grapes were harvested the 30th September 2009. Bottled the 13th April 2011.

Dégustation: 

The colour highlights a lemon yellow with green reflections. The appearance is dense, marked by a thick disc and generous legs showing a slight viscosity.The first olfactory contact creates an impression of exotic flavours such as mango, completed by fragrances of freshly cut hay. After oxygenation, a maturity of fruits emerges elegantly, characterised by the fragrance of candied lemons and marzipan. A mature nose that remains fresh.The onset in the mouth begins in a clear and generous manner. This dry wine has a very handsome volume in the mouth resulting from concentration and maturity. Fresh, its acidity integrates perfectly with and adds support to its citrus aromas such as mandarin flesh. I also feel herbal notes such as lime blossom and a touch of patisserie evokes by the angelica. The length is fresh and satisfying. We can feel potential minerality that is underlying and adds an extra brightness to the length.

Gastronomie: 

Serve with : citrus fruit flavoured fish, sautéed crustaceans and molluscs.Example : papillote of fatty fish like salmon, fried scallops with citrus fruit zest, orange sauce.Serving temperature 12°C.
